Delicious recipes that make the most of leftover food

5 minute Potato & scallion soup


  • ½ bunch spring onions ( chopped)
  • 10g butter
  • 250g leftover mashed potato
  • 10g vegetable stock cube
  • 500ml water
  • Salt & pepper


  • Lightly sweat the chopped spring onion in the butter and a teaspoon of water
  • Crumble the potato on top of the spring onions and mix
  • Pour over the water and add the stock cube
  • Bring to the boil and blend until smooth, season to taste
  • Add cream for a richer flavour and some chopped chives if you have them (if you're feeling extravagant add a sprinkle of white truffle oil!)


Bacon cheese & leek tart


  • 350g savoury pastry
  • 10 whole eggs
  • 330 ml milk
  • 1 large onion (softened)
  • 4 slices of bacon – leftover from breakfast
  • 1 diced leek (softened)
  • 50g cheese – can use any old bits from the fridge- smoked works well
  • Sprinkle of chopped parsley
  • Salt and pepper


  • In a 10" tart case bake the pastry blind for 20 mins @ 160c
  • Place the cooked and softened onion, leeks & chopped bacon in the baked tart case
  • Whisk together the milk & eggs, season lightly and pour into the tart case covering the mix completely
  • Sprinkle with the cheese and parsley
  • Bake @ 120c for 1 hour
  • Perfect with some salad with a little honey mustard dressing
