Delicious recipes that make the most of leftover food
5 minute Potato & scallion soup
Ingredients
- ½ bunch spring onions ( chopped)
- 10g butter
- 250g leftover mashed potato
- 10g vegetable stock cube
- 500ml water
- Salt & pepper
Method
- Lightly sweat the chopped spring onion in the butter and a teaspoon of water
- Crumble the potato on top of the spring onions and mix
- Pour over the water and add the stock cube
- Bring to the boil and blend until smooth, season to taste
- Add cream for a richer flavour and some chopped chives if you have them (if you're feeling extravagant add a sprinkle of white truffle oil!)
Bacon cheese & leek tart
Ingredients
- 350g savoury pastry
- 10 whole eggs
- 330 ml milk
- 1 large onion (softened)
- 4 slices of bacon – leftover from breakfast
- 1 diced leek (softened)
- 50g cheese – can use any old bits from the fridge- smoked works well
- Sprinkle of chopped parsley
- Salt and pepper
Method
- In a 10" tart case bake the pastry blind for 20 mins @ 160c
- Place the cooked and softened onion, leeks & chopped bacon in the baked tart case
- Whisk together the milk & eggs, season lightly and pour into the tart case covering the mix completely
- Sprinkle with the cheese and parsley
- Bake @ 120c for 1 hour
- Perfect with some salad with a little honey mustard dressing
